Marinade Madness

One of the easiest ways to spice up your favorite cut of meat is with a delicious marinade. Contrary to popular belief, longer is not always better when it comes to marinating times. Meat should not be left in a marinade overnight and most cuts should marinate for eight hours at the most. Seafood should only marinate for 15-30 minutes, as it will actually begin to cook after a half hour.

Here are some of our favorite marinades for beef, pork, chicken and fish.

Beef Teriyaki

2 tbs. vegetable oil
2 tbs. sugar
1 tbs. soy sauce
1/2 cup beef stock
1 clove garlic, minced
2 tsp. ground ginger

BBQ Pork

1 cup tomato sauce
1 small onion, chopped
3 tbs. vinegar
1 tsp. liquid smoke
1/2 tsp cumin, ground
1/4 tsp. mustard powder
1/4 cup brown sugar

Mediterranean Chicken

1/2 cup olive oil
1/4 cup vinegar
1 tsp. oregano
1 tsp. basil
1 large bay leaf, broken
1 clove garlic, minced
1/4 tsp. black pepper

Savory Salmon

1/4 cup soy sauce
1/4 cup cream sherry
1 tbs. fresh ginger, grated
2 medium cloves garlic, chopped
